    Welcome to Oatmeal With A Fork! This blog is about eating and living healthy. My goal, primarily, is to offer recipes that are as healthy as they can be without sacrificing taste. Along the way, I will also discuss things such as nutritional supplements, food benefits, workouts, beauty tips, family life, and random noteworthy topics. I’m hoping this will be a blog that you will find funny and informative! The Blogger My name is Lauren Goslin, and I have an intense passion for food. I actually have my degree in accounting….after switching from medicine…to psychology…to teaching…and back to medicine…did anyone else go through this? Anyway, due to circumstances with my health, I ended up getting my accounting degree online. My life has been full of twists and turns, not the least of which brought me to start this blog. In 1999, my dad died unexpectedly of a heart attack. This left me feeling a bit out of control in my own life and thus sparked an eating disorder and a detrimental cycle of bingeing and purging. Getting this disorder under control was a huge effort. The turning point came when I began experiencing heart palpitations, due to my erratic eating, and finally realized that I needed to do something before I did permanent damage. As I regained control in this regard, however, I overcompensated my lacking nutrition with an overabundance of supplements. Not knowing enough, my liver became so congested that this intake culminated in a hospital visit. The impact to my body was so strong that I lost all of my hair. It was devastating, to say the least. This, however, was not the worst of my health issues. In 2003, after a bad break-up and some soul-searching, I started to have horrible allergies. It was so bad that for over four years, I ate only chicken, beans, apples, cucumbers, and rice. Any deviation from this caused me symptoms of fatigue, itching and cracking of my hands, acne, and depression. After seeing many specialists who were of no help, my mom took me to a clinic in Texas. It was there that I was diagnosed as having both high mercury levels and Lyme Disease, which had damaged my immune system and ultimately caused the allergies. I received various treatments including IVs and saunas and was finally able to start introducing foods back into my diet. I was the happiest I had ever been! This elation led me to the desire to cook and bake, now that I could. I became obsessed (and still am) with looking up recipes and buying cookbooks, striving to make the healthiest food possible so that I never had to be as limited as I once was in what I could eat. In the midst of all of this, I met a man. A man who supported me in every way that he could and didn’t judge me. He, more than Texas, may even be the reason I got better. He is my husband today and still offers the same unconditional support. 8 months pregnant! We have since had two daughters that we are raising in Tucson, AZ, where I am at home and he is a firefighter.
